Corsair Artisan Distillery is a small craft spirits company with a distillery in Bowling Green, KY and a further distillery in development in Nashville, TN.
Specialising in very small batches of spirits – just a few cases at a time – in the companies pot stills. Everything’s done by hand, from production to bottling
Craft Distilling.
Is an emerging movement, these are small scale operations similar to a microbrewery. Also referred to as micro-distilleries, these hands-on operations make spirits in small batches, often producing less in a year than larger distilleries bottle in an hour. The large continuous stills used by major producers are eschewed for hand-operated pot stills.
Pot stills require more labour but allow the craft distiller fine control over flavours and give broad room for experimentation. This allows craft distillers to focus on local ingredients and unusual techniques to make small volume batches of high-quality spirits.
The Bowling Green, Micro Distillery
“Micro distilleries are, as the name suggests, small scale. The facility is 2600 square feet, gift shop included.
The historic town square in Bowling Green, Kentucky was chosen as a location as it is an easy to visit and so that, once you visit the distillery you can do more things in the immediate area. Downtown Bowling Green has wonderful restaurants, shops, galleries, theatre, parks that host many events, and Bowling Green’s new minor league baseball stadium.
Bowling Green Pot Still.
At the Bowling Green location a 50 gallon hybrid pot still, custom made by Vendome Copper in Louisville, is used to make a variety of different products from absinthe to gin to whiskey.
There are four plates in the still’s column, each of which can be disabled, giving the flexibility to distil various spirits.
For example; By disabling the column and shunting the spirit vapours to still’s vapour basket to produce gin-head style gin. Extracting the flavours of gin’s botanicals via vapour, rather than soaking the juniper and other herbs in liquid alcohol, yields less bitterness and produces a brighter, fresher gin.”
The Tennessee Brewhouse, Distillery & Taproom
In early 2010, Corsair Artisan officially became a licensed brewery and distillery in the state of Tennessee. The Nashville facility is located in the Marathon Motorworks Village. This historic building, located at 1200 Clinton St, is the former home of Yazoo Brewery.
This location provides the setting for brewing all of the whiskey mash for Corsair
In addition to all the needed brewing equipment, Corsair’s Nashville facility also boasts a 240 gallon still. This still (formally housed at the Bowling Green location) is a circa 1920 classic pot still that survived prohibition.
Originally a gin still, it is used for the first or “wash” pass when making whiskey. The unfinished whiskey spirit resulting from the first distillation, called low wines, is then finished in the 50 gallon spirit still.
Wry Moon
Made in very small batches, First distilled in the antique whiskey wash still then the handmade pot still to craft this un-aged rye whiskey. These hand worked stills preserve the peppery, spicy cereal taste of rye - resulting in a moonshine full of character.
Wry Moon Style
Peppery, Cereal, Full. Crafted For Cocktails.
Pumpkin Spice Moonshine
As the weather begins to get crisper, they figured you should have a spirit specially designed to keep you warm, so they created Pumpkin Spice Moonshine.
This unusual white dog whiskey is inspired by pumpkin ales. First pot distil malted barley and malted wheat to make a sweet malt whiskey. Next they load the pot still’s vapour basket with ginger, nutmeg, allspice, cinnamon and pumpkin, then redistill the whiskey to infuse and marry all the flavours.
There you have Pumpkin pie in a glass!!
Pumpkin Spice Moonshine Tasting Notes
Pie spices come forward first followed by the full sweet flavour of the pumpkin and malt whiskey. Great in a Manhattan.
