MILLSTONE Dutch Single Malt Whisky is hand crafted in a traditional distillery owned and operated by the Zuidam Family. With more than 50 years of experience in distilling of exclusive spirits and a constant search for perfection that has led to the birth of this exquisite whisky.
Fred van Zuidam founded the distillery in 1975 with the intention of creating a small distillery that only produced very exclusive quality product range, This distillery occupied only 300 square metres consisting of 1 small still and a single production line.
Initially it was a struggle and took over ten years for Mr Zuidam to establish his distillery with a reputation as being one of the finest distilleries in the Netherlands, However in reality it was after his wife Helene van Zuidam started creating the packaging for the products that business really took off.
In 1989 the company added a further 600 square meters to their warehousing and a further production line. The Zuidam Distillery is now run by the sons, Patrick and Gilbert (still under the watchful eyes of their parents),
Patrick is responsible for the distillery and production Whilst Gilbert looks after the customers. Between themselves they run a state of the art modern distillery of 3600 square meters with 4 brand new copper stills, over 1650 oak barrels, 4 production lines and tank storage.
However the construction of the new (4 hours fire retarding) barrel storage is nearly completed, which will enlarge the total distillery area with a further 550 (square) meters. Also it is intended that they will have more than 2000 barrels before this year's end" (2011)

Distillery Production Methods
Traditional Dutch Windmills mill the malted barley that is used to produce Zuidam Malt Whisky. By using this method for milling for their malted barley the distillery helps preserve the important Dutch heritage of the world famous windmills. Even more importantly the traditional millstones of the windmills slowly grind the malted barley into flour. This traditional way of milling causes almost no increase in the temperature of the grain and thus helps preserve the wonderful aroma’s available from the malt.
Mashing and Fermentation.
By adding hot water to the malted barley the hot water triggers the enzymes to convert the starch from the grain into sugars. The process takes about 5 hours per batch. The resulting Mash is cooled to 20 ° Celsius and pumped to the fermentation tank.
The Fermentation is carried out in small batches at a very low temperature to give the whisky its fruity flavours. The fermentation takes about 5 days. This is much longer than is customary but is essential to allow for the delicate flavours to form.
Distillation,
Millstone Whisky is double distilled in handcrafted copper pot stills. These small stills have an extraordinary large copper to spirit volume ratio compared to the large stills used in traditional scotch distilleries. The extra contact between the alcohol vapours and the copper helps to eliminate any unwanted substances and also stimulates the formation of the complex and fruity esters. The small stills thus produce a very delicate and fruity new spirit.
Aging.
The spirit is aged in small barrels, a combination of new wood barrels of American white oak as well as first refill barrels that have previously held Bourbon or Olorosso Sherry. The barrels are stored in a warm and dry warehouse which means the whisky ages rather quickly. The downside is that the evaporation losses are rather high. Typically the “Angels Share” is between 4% and 5% per year.

Nose: Delicate tones of fruit and honey combined with vanilla and wood and a hint of coconuts.
Taste: Rich honey sweetness, delicate spicy notes and a long vanilla oak finish.
