Originally the Tasmania Distillery was established in 1994 on the banks of the River Derwent at Sullivans Cove. Historically this location was the area where the first settlers raised their flag and began to build the settlement that has become the City of Hobart, Australia’s second oldest city.

There have been three periods of ownership 1994- 1998, November 1999 to July 2001 and the present owner Patrick Maguire and his three partners who have been distilling since 2003.

With a change of ownership in 2003 the barrelled whisky, still and equipment was relocated to Cambridge, a quiet village on the outskirts of Hobart.

According to Patrick Maguire the whisky from this first period of distilling was of so poor quality it was sold to bakers as base flavouring for Christmas cakes.

Only the whiskies from the second period of distilling are being bottled under the 'Sullivans Cove' label, the name was chosen to pay homage to the history of the region.

Initially these where made up of 7 year old whiskies available in: Cask strength at 60%, port cask, bourbon cask matured, and Double cask a marriage of port and bourbon casks bottled at 40%.

In May 2010 the distillery released 10 year old bottlings of Port and Bourbon casks.

The present owners plan to start bottling their production after the whisky reaches 12 years (2015)

The distillery has a single still similar in style to a French Brandy still with a worm condenser fitted. The 12,000 litres of wash for distilling comes from the Cascade Brewery. The wash is put through the still twice. Each production run involves 5 wash distillings then a further two Spirit runs for each batch of wash.

The still has been converted from steam heated to electric elements as this allows the still to be run at a lower temperature and more control.

The spirit is matured in 200 litre casks of either American Oak Bourbon or French Oak Port Barrels

The company has purchased a disused railway tunnel a couple of miles away from the present distillery. This is going to be used for storing the casks whilst maturing in cooler and even temperatures

Sullivan’s Cove whisky won gold, silver and bronze medals at Malt Whisky Society of Australia’s blind tasting in 2005, is the winner of the 2007 World Whiskies Awards ‘Best Other” whisky and consistently scoring in the 90’s (up to 95 points) in Jim Murray’s Whisky Bible.

Sullivans Cove whiskies are non chill-filtered and no colouring is used to enhance appearance.

Brewed and distilled using only Tasmanian barley and soft pure water.
A hand crafted whisky with unique Australian characteristics, the distillers like their whisky to be as individual as they are. Each bottle of whisky is drawn from a single or a limited number of casks in the case of the double cask. As each cask offers a unique flavour and colour characteristic you can expect to find variances from one bottling to the next.
